No... Chinese is a collection of several languages, not a single language. Cantonese is a language, Mandarin is a language, Chinese is not (and ambiguous).

Cantonese is dialect of Chinese. Well that's how it's considered here I guess. Not sure about other places

Chinese isn't a language. Mandarin is the main language of China but that doesn't mean that makes Chinese = Mandarin

Chinese is a nationality, not a language. Mandarin is the language.
You don't speak American, you speak English.
You don't speak Canadian, you speak English (French in nooby parts).
You don't speak Mexican, you speak Spanish.

The Germans speak German.
The Hungarian Speak Hungarian.
There is a written form called "Classical Chinese." However, Chinese is a language family consisting of different variations. It is okay to ask what variation of Chinese do you speak, but you should not ask what dialect of Chinese. You would ask what dialect of Mandarin, Gan, Hui, etc. So yeah language family is the key phrase. It is not a verbal language o.o
