Hello.
1) Need to deprotect map to edit texts of the map?
2) Where to find those texts and what program need to use?

When does that text appear? it looks like it's part of the loading screen?

It depends from map to map.
You can edit any map by using Ladik's MPQ Editor and JassCraft. Some texts can be in war3map.j file or in war3map.wts. Look:
This is the text in war3map.wts
After editing it with JassCraft or Notepad++...
